Roasted Pumpkin Seeds

Looking for a way to use the pumpkin seeds from a pumpkin, well here is a great recipe I found from Kroger's myrecipes:

  • 2 1/2 TBSP Olive Oil
  • Seeds from 1 large pumpkin rinsed and dried
  • Salt & Pepper, to taste

Preheat oven to 250 F. Mix pumpkin seeds and oil in a medium bowl; spread seeds onto a cookie sheet in a single layer. Sprinkle with salt and pepper and toss to coat. Bake for about 7 minutes or until light brown and crispy.

Variation:

  • Spicy: mix together 1/4 cup melted butter and 1/2 tsp hot sauce and drizzle over the seeds. Then sprinkle with a combination of 1 tsp cayenne pepper, 1/2 tsp cumin and 1 Tbsp chili powder.
  • Sweet: toss seeds in a mixture of 1 Tbsp melted better, 1 Tbsp sugar, 1 tsp cinnamon, 1/4 tsp nutmeg and 1/8 tsp allspice

Sprinkle pumpkin seed on top of mixed green salads or eat as a snack.

I love roasted pumpkin seeds. My mom used to make them every year after we carved the pumkins.
